Chef-owner Eugenio Maiale opened the doors in 2007 and quickly built a reputation as one of Sydney’s go-to venues for authentic Italian pasta. The long marble table that graces the main dining room is where Eugenio and his team craft the pasta in the morning – and it’s where loyal regulars sit down to feast of an evening. The menu is a study in simplicity, with entrees such as buffalo mozzarella, rocket, tomato, prosciutto; fried salame veneto, polenta, parmigiano or swiss brown mushrooms, green peas, mint, ricotta salata. For mains, you might be lucky enough to find bucatini all `amatriciana or rigatoni al ragu – but look out for the daily specials which take advantage of seasonal produce. Punters rave about this busy, buzzing place – in fact, you’ll be hard-pressed to find a bad review. From the homemade bread served with a small bowl of chilli oil to the extensive wine list, this is a local winner you’d be mad to pass up. Best dish: pappardelle con ragu di manzo (hand-cut pappardelle pasta, slow braised beef, red wine, tomato)
