Ben Willis

Prior to Aubergine, Ben worked in Sydney at a variety of restaurants including the acclaimed Bennelong. During his time overseas Ben worked at a number of restaurants including Michelin-starred Chez Bruce, and as Head Chef of The Harrington Club, a private members club owned by Rolling Stone, Ronnie Wood. These years were critical in shaping his professional skills and personal direction as a chef. The menu at Aubergine reflects Ben’s experience with strong French and European influences.

Excellent service from all kitchen and floor staff. We’d made our booking with a note that we were after vegan options if possible and it was for a special occasion. Everyone was very accommodating of our requests and explained altered dishes and bespoke matched wines with great detail and care. Worthy of the splurge for a special occasion.

Our special occasion at Aubergine was made all the more memorable with the exceptional food and wine, and amazing service. It lived up to what we might hope for, being a 2-Hatted restaurant. A fantastic evening.

About Aubergine Restaurant

Aubergine is an intimate space, with high ceilings, beautiful lights and simple, elegant decor which allows the product of creative and interesting food to shine. The food style is contemporary, however there is always a classic background to our ideas. The kitchen is supplied by local farmers and benchmark suppliers that understand that rather than we tell them what we need we prefer for them to tell us what produce is at its best on the day. In turn that means that our menu is updated daily. Our wine list has won numerous awards and has over 500 labels of interesting and classic wines. It shows the same philosophy of using local and smaller growers that produce interesting wines for us to get excited about.
