Ben Willis

Prior to Aubergine, Ben worked in Sydney at a variety of restaurants including the acclaimed Bennelong. During his time overseas Ben worked at a number of restaurants including Michelin-starred Chez Bruce, and as Head Chef of The Harrington Club, a private members club owned by Rolling Stone, Ronnie Wood. These years were critical in shaping his professional skills and personal direction as a chef. The menu at Aubergine reflects Ben’s experience with strong French and European influences.

Our special occasion at Aubergine was made all the more memorable with the exceptional food and wine, and amazing service. It lived up to what we might hope for, being a 2-Hatted restaurant. A fantastic evening.

We went to Canberra for the weekend just to try it again and they didn't disappoint. The wine pairing didn't miss a beat, they have an amazing sommelier, and the food cooked to perfection. The only gripe I'd have is that they are in Canberra and not in Sydney.

We had a perfect fegustation experience. The food was beautifully prepared, the flavors lies ingeniously matched. Shiso with sorbet, Swiss chard with peach mousse. Wonderful dish after wonderful dish, with attentive, flawless service. Thanks. Wish we hadn’t left it so long since our last visit.

Great venue but too dark - it doesn’t help present the meals which are also on dark plates. Doesn’t need to be bright but just a few more Watts.... Female toilet is too dark to use mirror for anything over than most basic needs - do not try eye drops!

Lovely restaurant, Well presented and delicious food and each course was explained as it was brought to us. The matched wines we extremely well done and well explained in the context of the food and region.

About Aubergine Restaurant

Aubergine is an intimate space, with high ceilings, beautiful lights and simple, elegant decor which allows the product of creative and interesting food to shine. The food style is contemporary, however there is always a classic background to our ideas. The kitchen is supplied by local farmers and benchmark suppliers that understand that rather than we tell them what we need we prefer for them to tell us what produce is at its best on the day. In turn that means that our menu is updated daily. Our wine list has won numerous awards and has over 500 labels of interesting and classic wines. It shows the same philosophy of using local and smaller growers that produce interesting wines for us to get excited about.
