Opened in October 2016 by husband & wife team Hamish Ingham & Rebecca Lines in Sydney's new waterfront precinct of Barangaroo, Banksii Vermouth Bar and Bistro offers fine dining food in a casual setting. Sydney's first restaurant and bar dedicated to Vermouth, Banksii is lovingly named after Sir Joseph Banks, the first botanist to adventure & document the plants & botanicals of Australia. The contemporary menu is light & fresh, influenced by the Mediterranean with a strong focus on botanicals. The drinks list is extensive with up to 30 Vermouths available by the glass, along with classic cocktails & 150 wines on offer to suit all tastes. Banksii holds up to 200 guests across the bar area, indoor dining & our north western outdoor terrace. Open 7 days a week for lunch, afternoon drinks & dinner, it’s the perfect location for all occasions.
