Meet the Chef

A native-born Québécois, Serge spent his formative years surrounded by a family whose food skills were to leave a lasting impression. Serge began work as a kitchen hand and studied his dilpoma in Cuisine Professionnelle in 1974. In 1983, Serge helped open the Regent, Sydney, and in 1999 announced his resignation and the opening of his restaurant in the historical Bathers' Pavilion. Serge respects the service tradition and regards quality produce as the optimum ingredient in his cooking.

    Bathers Restaurant very disappointing service amateur. Waitress kept interrupting and pushing more food when we made it very clear we were happy with just a main. Ordered vegetables which didn’t come. Tables too close together. Nobody to greet us stood in queue.

    Food probably a bit expensive for what it was. Champagne bar was lovely though. The location is of course a winner but don’t want to be ripped off with the cost of the food.

    Everything was fine. The fishes were great. One negative was being given the bill and then having the Efpos machine arriving about 1.5 hour in when we have not asked for them.

    Had a great time and the food was fantastic, love the new renovation but we were crammed in between 2 other tables of 2 with barely enough room to get in and out of our seats. Other tables were available the whole time so not sure why we needed to sit so close to other diners.

    The Service needs to be more attentive. - we did not get a dessert menu until we ask for it and then it took for ever to be served - we were offered coffee before getting dessert -when we asked for coffee after our dessert we were told no more madelains but we were still charged the full coffee price of $9 each. Sorry Serge.

    The food is lovely. We ordered cocktails to start and they were not delivered by the time our food arrived. Service in the bistro was disorganised and inside but I will go again and hope it has improved

    Newly refurbished Bathers' looks amazing and new areas for casual dining or drinks are great. The staff were very friendly and helpful, even though it was a really busy Thursday night. The Mussels were lovely and the atmosphere was buzzing. A great beachside location, with fantastic views for a weeknight treat.

    Beautiful view and decor, food was nice for fine dining but nothing was outstanding. For a quiet day, service was slow and we had to call the waiter’s a few times to order. For the cost I felt that the service should have been more attentive. Whilst it was nice, in my opinion there are better fine dining experiences in Sydney.

    Never squeeze guests into too small a space if you want a good review for fine dining. Never send them to the bistro when they book for your restaurant. If they wanted a cafeteria, they could have saved themselves $120 in taxi fares coming in the first place.

    We visited for lunch on the opening after refurbishment. Everything was perfect from the welcome and service by Jess Mead, complimentary bubbles and beautifully presented food. It was a lovely sunny day and the view is one of the best in Sydney

    The new fit out is superb, the service was great however the food was extremely disappointing,even more so because of the price. There wasn’t even one dessert that was appealing and I love my desserts. The wine was very overpriced as one would expect in a restaurant of this caliber, but when it accompanied very ordinary cuisine,and was not part of a special experience., it was galling. I have been going to Bathers for 50 years and that was the worst meal I have had there.

With unspoiled views over peaceful and sparkly Balmoral beach, The Bathers’ Pavillion sits on one of Sydney’s most attractive locations, just a stone’s throw away from the sand and cozzie-clad crowd on the beach below. Set in a beautifully restored historic beach pavillion (hence the name), internationally acclaimed celebrity chef, Serge Dansereau dazzles guests with his dishes such as crisp skin barramundi with heirloom carrots nasturtium, black olive and chorizo. If dessert is more your thing, you’ll swoon over the wattle seed crème brûlée with passionfruit curd banana, pastry toffee, macadamia ice cream. Oh heavenly father it’s good. With huge glass windows in both the restaurant and the more casual cafe, it’s the perfect place to unwind and let the worries of the world wash away - for breakfast, lunch or dinner.

We require 24 hours notice for all cancellations. Groups of 8 or more will incur a $25 per person fee if cancelling within 24 hours of the booking. We can hold tables for up to 15 minutes past booking time. If you or your guests are running late please call us 02 99695050.

We cater for most dietary requirements. Whilst all reasonable efforts are taken to accommodate dietary needs, we cannot guarantee that our food is allergen free. We will do our best to accommodate seating requests , however these cannot be guaranteed. A 10% service charge applies to groups of 8 or more, on public holidays and on Sundays.
