Picture of Jose Silva.

Jose Silva

Portugese-born Jose Silva moved to Australia at the age of 12. Growing up with parents in the industry led Jose to develop a passion for food. Jose began his career as an apprentice at Buon Ricordo, and became the Head Chef of Bennelong in the Opera House for 12 years until its move to Paddington. Taking a break from fine dining, he then bought the Petersham bakery, Sweet Belem, before opening Bibo in April 2016, bringing over a decade of knowledge and experience to the Mediterranean bar.

Bibo is a rare find. From my first visit I loved it. It’s like being in Paris with the wine to match!!! Magnificent food & atmosphere & Johnathon & his team are superb hosts. We all just adore being at Bibo and everyone I’ve taken there falls in love with Bibo too!!! BEST PLACE to be summer OR winter. Just LOVE IT!!

It's not a large space but there's a real buzz throughout the bar and a great wine list especially wines by the glass. The kitchen's pretty sharp too - the king prawn beignet was excellent.

This is a great restaurant. The staff make you very welcome and give you great service as well as an extra treat at the end of the evening with a Portuguese tart to enjoy. Terrific food, service and ambience. Great for dating, families, friends on all occasions.

What a lovely place, with the best service, thank you Louella :) Thank you to Chef Silva we had our wish fulfilled in savoring our favorite dish (Bacalhau a bras) , as a special request. The traditional Portuguese tart served with cinnamon ice cream what a beautiful twist to it. Thank you for a great service as always. _Lurdes
