Jose Silva

Portugese-born Jose Silva moved to Australia at the age of 12. Growing up with parents in the industry led Jose to develop a passion for food. Jose began his career as an apprentice at Buon Ricordo, and became the Head Chef of Bennelong in the Opera House for 12 years until its move to Paddington. Taking a break from fine dining, he then bought the Petersham bakery, Sweet Belem, before opening Bibo in April 2016, bringing over a decade of knowledge and experience to the Mediterranean bar.

We had a lovely dinner at Bibo with tentative service, delicious food and bustling atmosphere. We ordered the chef’s menu which featured a range of their specialities. Our favorite was the roasted artichoke and roast chicken which was packed with flavor. Finished off with the perfect salty chocolate mouse cake and coffee ice cream.

Food excellent, nice wine list. They made a significant mistake on the bill (over $100). Instead of apologising, the waiter (L) was very rude when I declined to add a gratuity. I suspect this has happened before but not every customer spots it! Shame, could have been high on our list to return but there’s plenty of choice so why take the risk.

Overnighted in Double Bay and enjoyed what can only be described as a great experience for lovely food, great wine and service. If you want to relax and have a great night this is the spot.

Wine and dine. In the heart of Double Bay, you’ll find this elegant wine bar serving wine from around the world, along with contemporary Mediterranean fare. Take a seat at the long smooth wood bar and let sommelier, Louella Mathews, give you suggestions as you peruse the wine list she curated. After a couple glasses of the McLaren Vale Shiraz, it’s time to eat.
