Jose Silva

Portugese-born Jose Silva moved to Australia at the age of 12. Growing up with parents in the industry led Jose to develop a passion for food. Jose began his career as an apprentice at Buon Ricordo, and became the Head Chef of Bennelong in the Opera House for 12 years until its move to Paddington. Taking a break from fine dining, he then bought the Petersham bakery, Sweet Belem, before opening Bibo in April 2016, bringing over a decade of knowledge and experience to the Mediterranean bar.

Great service and lovely ambiance. Food and wine are standout too! Perfect spot for a date night or drinks and nibbles with friends. Definitely a hidden gem in Double Bay.

Sunday’s Suckling Pig innovation very well received by our family. We also highly recommend the large Private Dining Room upstairs which accommodates around 25 guests, has its own bar & excellent for business dinners in addition to Birthday & similar celebratory events. Jonathon & Louella are perfect hosts to ensure each dining experience is memorable.
