Jose Silva

Portugese-born Jose Silva moved to Australia at the age of 12. Growing up with parents in the industry led Jose to develop a passion for food. Jose began his career as an apprentice at Buon Ricordo, and became the Head Chef of Bennelong in the Opera House for 12 years until its move to Paddington. Taking a break from fine dining, he then bought the Petersham bakery, Sweet Belem, before opening Bibo in April 2016, bringing over a decade of knowledge and experience to the Mediterranean bar.

Patrons should know when they book a “table” they are getting crammed in seats next to each other at a bench - I would not have booked. We had to ask repeatedly for any item - to order, for water and even to pay. Over crowded tiny space where they hope pretentiousness makes up for lack of service. Then to be reminded on paying (after finally walking to register) that I could include a tip!! I usually do (without being reminded) but not likely in this case!!

Great looking wine bar with nice atmosphere. Food brilliant and great wine list. Typically indifferent Australian service, had to get up and go look for wait staff on a couple of occasions to beg them for another drink
