Joe started his chef life in Auckland. Since moving to Sydney years ago, Joe has worked at the Grand Hyatt, est, and many years with the Luke Mangan Group, including Head Chef at glass brasserie in the Hilton Sydney, and designing menus for restaurants in Singapore, Japan, Indonesia and the Maldives. Joe is one of the owner operators of Bondi Trattoria and his food is an innovative, yet comforting, interpretation of Italian cuisine, with some eclectic ingredients thrown in for good measure.

Fantastic location, with friendly service, good food and some interesting Italian wines on the list.
Glad to hear you enjoyed. The wine list is small and we like to keep it interesting, and of course we want it to be a good match to our food. So there is a strong emphasis on Italian wines, as well as Italian varietals grown in Australia. Hope to see you again soon at the Tratt.

We found it very noisy. Some form of sound solution in the form of a foam mobile or wall deco would help. One of the party ordered rump medium rare. It was far too rare for her. I ordered medium. It was also too raw for me but I enjoyed the flavor and ate most of it anyway. I was very impressed that the chef made my boiled potato as requested by phone earlier and my husband LOVED the pasta dish he had. We’ve always had good food there but this time slightly disappointing. It doesn’t mean I won’t go back though.

Service was extremely slow and reasons for delay were ridiculous
Thanks for the feedback, sorry you thought the service was slow. Given that you have chosen to submit feedback anonymously we're not sure exactly what happened, but we can hazard a guess that you might have been a group of 9 people, including children. When we have children order, we ask the table if they'd like to have the children served first, or with adults. The waiter assured us that she had done this. Perhaps, given that the table ordered no starters, not even bread while they waited, and there was a well done steak on the order (as well as dishes with changes from how they are prepared on the menu, both of which will slow service beyond anything else that we could have controlled), we should have insisted to serve the kids meals first. We do note that this table ordered exactly 59 minutes before their bill was paid so we're not sure what their standards of an acceptable wait was. But we do appreciate your feedback and we hope that we will be able to meet your high standards in future, as we do with all of our guests. Thanks again and sorry you were disappointed.

The tuna angel hair pasta and the Tamara dip are a must have! Great food and amazing service!
Thank you very much. We love the tarama too, with fennel pollen, lemon oil & shaved bottarga. The angel hair with tuna... such an institution. Glad you enjoyed our food and our service. We hope to see you again soon at the Tratt.
