Hi Leonie, thank you for taking the time to communicate your feedback to us. We have every desire to address your concern and provide you with as much information as possible. We consider our Moreton Bay Bug Risotto to be a dish free of gluten. The rice is slowly cooked in a stock that is made in house. There is a Bug halve placed on top of the dish and bug meat cooked through the risotto. The other ingredients are chilli, onion, garlic and Napoli sauce all of which are prepared without wheat and related grains, including barley, rye and oats. We take dietary requirements very seriously and as it was in your case pass on all allergy requests to the kitchen so as that the appropriate precautions can be taken. We have separate pizza cutters and tongs with very clear bright blue handles specifically for gluten free dishes. The other gluten free options in our restaurant are the gnocchi and gluten free pizza which are supplied to us from Ardor gluten free foods. We stretch both our gluten free pizza bases and our regular pizzas with rice flour so as that we can minimise the risk of cross contamination in the pizza kitchen. Unlike Ardor gluten free foods, our kitchen is not absent of wheat products, so where all precautions are taken to eliminate risk, traces of gluten may be present.
