Stylised Fresh Grill Salt Grill is the signature restaurant at Hilton Surfers Paradise commended for food, knowledgeable staff and efficient service. Celebrity chef Luke Mangan’s fine dining restaurant reflects his passion and culinary expertise through food sourced from the finest local produce. Chic interiors in black and brown hues, the restaurant has a 157 seating dining room with an open kitchen. Open for breakfast Monday - Sunday, lunch only on Friday and dinner served 7 days a week. The a la carte menu has tapas and entrees to choose from like Sweet corn potato croquette, shallot puree and chilli oil or the Charcuterie board – cured and smoked meats, grilled artichoke, rye bread, cipollini onions and cornichons. You could also try Luke’s signature Hiramasa kingfish sashimi, ginger, eschallot and Persian feta.
