Stanaway consistently heads restaurants with reputations for direction, distinction, cohesion and ultimately, culinary excellence. Guy Stanaway’s culinary career begun in Christchurch and later in Executive Chef roles at two world-class Aman, combining loves of travel, culture, and cooking with indigenous ingredients. Rare Hare’s intuitive nature and nod to modern design were a perfect fit for Stanaway, which he oversees in his role as Executive Chef of Jackalope Hotels.

A magnificent experience. From the moment you walk in you are made to feel special. Although it was busy, we never felt like we were rushed or neglected. The food was delicious and perfectly paced.

About Doot Doot Doot

Hatted restaurant on the Mornington Inside the boutique Jackalope Hotel, nestled in a vineyard on the Mornington Peninsula, lies the decadent dining experience of Doot Doot Doot. With black banquette style seating and undulating installation of 10,000 globes on the ceiling inside juxtaposed against the working winery outside, it’s a setting unlike anywhere else. The five-course set menu evolves each month with the seasons, with an emphasis on ingredients from their kitchen garden and local Mornington Peninsula producers. Matching wines are available, or order off their extensive wine list, featuring wines from the on-site Willow Creek vineyard, as well as a selection of Australian and international wines by both the glass and bottle. Pre-dinner cocktails are also available at Flaggerdoot, serving up a mix of favourite classics and original creations with unique flavour combinations. Best dish: Glazed quail Peninsula
