Dan Hong

Starting his career in the kitchen of his family’s Vietnamese restaurant chain, Dan quickly developed a taste for a career in a challenging and exciting kitchen. Dan developed his culinary skills at an elite list of Sydney restaurants including Longrain, Pello Restaurant and Marque. Once qualified, Dan joined the Tetsuya team as Chef de Partie before moving to Bentley Restaurant and Bar as Sous Chef. After a stint abroad working in New York, Dan joined the Merivale team.

Change of chef, but the new menu still is attractive. Pity they have taken away the lunch 2/3 course option.

We tried testing menu with matching wines. Food and drinks were very good, and service was exceptionally good.

I can't help but feel like Est has gone downhill. For a restaurant such as this you expect a certain level of service...unfortunately there were multiple times this was a letdown. From not being called over when the table was ready to having to ask the bar for drinks when waiters failed to notice empty drinks for long periods of time, it was quite a disappointment. Luckily the food was still good - most notable was the Marron entree.
