Dan Hong

Starting his career in the kitchen of his family’s Vietnamese restaurant chain, Dan quickly developed a taste for a career in a challenging and exciting kitchen. Dan developed his culinary skills at an elite list of Sydney restaurants including Longrain, Pello Restaurant and Marque. Once qualified, Dan joined the Tetsuya team as Chef de Partie before moving to Bentley Restaurant and Bar as Sous Chef. After a stint abroad working in New York, Dan joined the Merivale team.

Celebrate Melbourne Cup with all the trimmings with an unforgettable dining experience at est. For $250, each guest will be greeted with a glass of Dom Perignon on arrival, followed by a three-course menu that includes sides, tea, coffee and petit fours. For an elegant and extraordinary Cup Day at a hatted restaurant, est. is a clear winner. Full payment is taken at the time of booking, this event is not refundable. For groups of 8+ guests a service charge of 10% will be added to the final bill on the day, this is a discretionary gratuity. Large groups may be seated across multiple tables. Your table will be allocated until 5:00pm. The celebrations will continue at a variety of our venues after the race, please refer to Merivale for more information. A 1.5% credit card surcharge applies.
