    We enjoyed the freshly made pasta and enjoyed the kitchen salad, though they left out the olives until we reminded them that they should be included. We found the pizza a bit tough but overall it was a nice meal.

We're part of a new wave of restaurants (like Fonda and Hanoi Hannah) where we have more than one (there are three Ettos), where we don't care for white table cloths and waiters, but where the food is top notch. We think of it as democratizing pasta - where a dish of fresh made pasta that would cost you $30 in a restaurant is served-up in a more casual environment for $16. Great Italian food for Great prices, cooked in a flash with no fuss. Hope we see you again soon.

    Food was yummy but it wasn’t warm enough and it was quite sloppy presentation when it’s suppose to be fresh pasta

Even though we're a quick and casual pasta bar (which is why our dishes are $15-$20 instead of $25-$30) we aim for the same level of taste and presentation as our more expensive Italian peers.     Good tasty fresh pasta but a bit quiet at the restaurant. They should promote it so that there are more people coming through which would add to the ambience of the place

When people know us and know they want a great pasta at a good price with no white table cloths or expensive wine lists, they love us. But when they are expecting those things they can feel let down.     Very average pasta and underwhelming service. Came here for a work lunch and they were able to serve our group relatively quickly so, that's a positive. Other than that, wouldn't go if you're looking for a nice pasta.

    Thanks for your feedback Christian. You're right, our pasta bar is a casual dining experience. This means we can look after a group for lunch on a workday in less than an hour, and for less than $20 per head. We do this with pasta we make fresh every day and a range of delicious sauces combining fresh and high quality ingredients (did I mention the pizzas?). But in order to be able to do all this for $15-$20 per pasta we sacrifice the white table cloths, the waiter service, the long wine list and more refined ambience of a restaurant. We consistently get voted as one of the best pasta joints in Melbourne and best under $25. Whilst we might not be for you, we appreciate you coming along to give us a go.     The pasta is the best. Really fresh and generous servings. It's a bit of a take care of yourself situation in the sense that other than delivering the food to your table, there is no other table service e.g. you have to set your own table and order in the take away line. Only a minor setback really. If there was table service, it would be almost perfect.

The inspiration for Etto is the small pasta joints in every back street of Italy that are quick, delicious and great value. We have considered waiter service many times, but feel it would shift us towards being another Italian restaurant -(which we are keen not to be) and would also mean we'd need to increase our prices considerably - which also is not what we're about.     Quick but good quality pasta in a fast-food like setting. Wouldn't be going here for a special occasion but it definitely has it's role for an easy lunch.

One of the challenges for us is that as you pointed-out, we're a casual Italian eatery concept - healthy, fresh pasta, delicious sauces, cooked fast and at a great price - but sometimes people come expecting a white table cloth, waiter and $60 bill kind of deal. We always hate to disappoint, but that's just not what we're trying to do. For a fast, fresh and casual Italian meal - we're the best in town.     All 3 of us got dishes within 8 minutes. The pasta was not cooked enough, all the dishes tastes like uncooked flour or wheat or whatever grain. The sauce and pasta didn't go well. My friend got a dish where the sauce was somehow sour. Even one of my friend left the whole dish. The price is affordable and the staffs were friendly, but it worths nothing when the foods are terrible. We all told each other that we would never come back to this place.

    Hi there, I'm really sorry you and your friends didn't enjoy your meal with us at all. It sounds like the way we like to cook really missed the mark. Our pasta is cooked just a little past al dente, which is how most of our customers like it, but it seems like you would have preferred it to be cooked more. We make our pasta fresh each day, so it can taste different to what you might be used to. I'm guessing with some confidence the sour tasting dish was our carbonara. We make ours with créme fraiche, a tradition in many parts of Italy, but a surprise if you're expecting the classic Aussie version. When we first started we cooked all of our pasta truly al dente in the style of local Italian tratorias, but we soon learned that didn't work for our customers.     A little too much sauce on our pastas, made the dish a little soupy and very salty The music a little too loud, couldn't hear each other across the table (perhaps this is just where we sat)
