Mountain delight A visit to the beautiful Fairmont resort near the Blue Mountains village of Leura is reason enough to celebrate, and the Eucalypt Restaurant is the perfect place to do it. Finish off a day of bushwalking and sightseeing with a gourmet feast of mod-Oz food, overseen by talented chef John Slaughter. Each of the options on the small but perfectly put together menu will make you glad you made the trek to this glamorous mountain hideaway. The pan-fried scallops with confit chicken wing and corn puree is a charming take on the idea of surf and turf and an excellent starter, followed by one of the heartier mains such as the lamb back strap with broad beans and sweetbreads or the delicious duck breast cassoulet. The wonderfully sticky treacle tart (with coffee granita, cinnamon mascarpone, brandy snap and caramelised figs) is the ideal way to finish. Make sure you reserve a table in advance, whether you are a guest at the resort or not, because this chic comfort food is always popular and Eucalypt Restaurant tends to get booked up, especially on weekends.
