From baguettes to banh. Thanks to its colonial past, Vietnam has strong links with France and nowhere is this more apparent than in its food. It’s a relationship that chef and owners George and Leanne Lai celebrate in their Darlinghurst restaurant La Mint, located just next door to Red Lantern on Riley Street. The combination makes for a striking menu, with coco curry and Vietnamese campfire beef sitting alongside such classic French fare as Chateaubriand and boeuf bourguignon. Elsewhere, the two are more obviously fused together in such dishes as the pavé de porc and cheese dumplings. It has a strong local following with Leanne even running guided culinary tours of her home nation for enthusiastic regulars. The restaurant fit out reflects its fusion-minded owners, with a bistro-like set up that quietly reveals its Asian influences on closer inspection. You should try it. Best Dish: Pavé de porc.
