Meet the Chef
Dishes are inspired by Joe's Sicilian heritage and mother's home cooking. The Vargetto home in a Melbourne bayside suburb was like a small Sicilian farm with his father growing edible plants in the backyard with seeds bought back from Sicily, and mother using fresh seasonal produce in the kitchen to feed an extended family, Joe's love of food led him to some of the best kitchens in Italy and France and apprenticeships in Melbourne's finest restaurants. An amazing blend of modern european and traditional Italian influences, all spanning from owner and chef Joseph Vargetto’s heritage, style and vision. Mister Bianco's menu continues to evolve with the Melbourne’s eclectic seasonal food trends.
The cosy, bistro-style dining room is warm and nostalgic and the menu is brimming with Southern Italian flavours that are as comforting as your Nonna's blankets. Start with arancini, meatballs and burrata mozzarella, before sampling a handmade pasta dish or main of the likes of slow braised organic beef cheek.
