His excellent relationship with growers, fishers and suppliers allows him to secure the best local and national produce, personally visiting the markets most mornings before daylight to select ingredients which fuel his daily inspiration.

The Italian Job wine lunch - $125pp
On ..... a very special culinary event will occur at Moda. In association with Paradox Wines, Moda will host
"The Italian Job", a Lunch of authentic Italian cuisine, wine and stories.
Guests will enjoy five courses from Executive Chef Javier Codina, The dishes have been lovingly matched with wines from Veneto, Sardinia, Abruzzo, Tuscany and Piedmont.
Jean-Jacques Peyre from Paradox Wines will share "Italian wine 101" basics while he takes guests on a voyage through the regions enjoyed on the day . "This is not a traditional wine Lunch" said Jean-Jacques. "We'll keep it light and entertaining with a few tales, travel tips and just enough information so you can enjoy the wine a bit more

3 Courses with signature dishes from the menu and dishes created from fresh seasonal produces (5 Tapas & Entremeses followed by 3 Mains Featuring Brasa, then 3 Desserts). Selected by the chef for the entire table.
