Troy Rhoades-Brown

Troy began his career in Newcastle, working for a family owned Italian Restaurant. He then moved to the Hunter Valley to work for Robert’s Restaurant. Troy was awarded the 2005 Brett Graham Scholarship, granting him a trip and work experience at The Ledbury in the UK. 2009 saw the opening of Muse Restaurant. Troy has a dedicated love and attention for running a restaurant that delivers a complete dining experience through a passionate, professional team that are proud to champion local produce.

Amazing restaurant, the atmosphere is very special with a huge woodfire which really get you to a romantic and comfortable experience. The menu is great with a 4 courses, generous portion and a service irreproachable and very friendly The sommelier was very helpful and knowledgeable with a super wine list with a beautiful local wine which I recommend. 9/10 Would be my final note. This is my third visit to Muse and it doesn't disappoint. The food is artistic, creative and delicious. Evening times have the additional appeal of the open fire which adds to the atmosphere. The kitchen is also more of a theatre at night time, thanks to the lighting. This is not a cheap place, but its superb.

The most Incredible chef hat restaurant we have ever been to. The food was exquisite and the signature desert to the most incredible taste to land on my palette. I cannot recommend this restaurant highly enough. Bonus points for the beautiful fire place and smell of the restaurant to set the atmosphere

On our third visit we concurred with our previous conclusion that this must be one of THE restaurant experiences in Australia. Every thing was perfect except that I was facing into the afternoon sun. The sommelier was excellent and guided us to a wine just of our taste. The food looked and tasted exquisite. The service was excellent but we found some of the descriptions too soft for our ageing ears. A wonderful experience from our greeting to our now memories. Thank you.

From the moment our group of 6 were greeted at the door to the end of our leisurely lunch, we were looked after. The menu provides a choice of either degustation or a la carte - we chose a la carte as the whole table must take the degustation, which didn’t appeal to all in our group. The food was a taste sensation & beautifully presented. Good all-round wine list with some very good offerings with a mid-range price tag. You will not be disappointed if you dine here.

This is our 3rd time at muse over the last 5 years. Unfortunately the degustation menu had a few dishes that didn’t have much flavour. Muse coconut still a highlight. Service was great as always

This is our favourite restaurant. We live in Sydney and have been to a lot of hatted restaurants in Sydney, but we love Muse for food, service and price. If we can’t get into Muse we don’t go to the Hunter Valley for the weekend. Simply the best, menu changes seasonally.
