Russell Blaikie

Russell Blaikie's childhood on his parents'farm in the Margaret River region gave him a deep understanding of seasonality and inspired a desire to cook. After Head Chef stints at highly awarded restaurants across Perth, Russell opened Must Winebar in 2001. Revisiting his obsession with French bistro food, he developed an outstanding menu with a modern touch and expert technique.

Couldnt be move in love with Must Winebar. We went back for our wedding anniversary and couldnt fault a thing! We went on a Tuesday when there was a WA wine tasting be showcased. Made for a great atmosphere and will definitely be back for one of their special events!

Great place to catch up with friends. Food always reliable and good. We had a French service staff and he is amazing! Recommended us some great wines to drink. Overall a lovely evening out! Will definitely be back!.

I was very disappointed not to have been offered the 30 percent discount for our meal It was available on the time and date of our reservation - but I guess I booked in the wrong spot Our server asked if we had a discount when he rang up our bill I was disappointed that we did not Our meal was $120 so it would have been a welcome discount ! Other than that it was delicious and the service was excellent ! :)

Food was good. Service was not the best on the night as we had to ask for GF bread multiple times and they weren't as attentive as per usual.

The salmon crudo, steak tartare and the desserts were amazing. Also cocktails and wines by the glass. The service was the only problem, it took us almost an hour to get another bottle of still water and order wines. The waiter simply forgot about us and never came back to our table to take orders, give us water or food check. So I had to ask for the manager at the bar who kindly and professionally sorted out everything for us. I’ll give it another chance but hoping for a better service.

This modern wine bar boasts an excellent wine list (as you’d expect) that has kept it at the pinnacle of Perth’s bar scene since 2001.What drives the buzz for wine enthusiasts is its wine list is regularly changing with a challenging, diverse collection of wines from all parts of the world – served by the glass. They are rarely familiar and always tantalising: an alluring white from the Beeka Valley; a rosé from Montsant; a chardonnay viognier from Chile; a vermentino from Sardinia...should we go on?
