Russell Blaikie

Russell Blaikie's childhood on his parents'farm in the Margaret River region gave him a deep understanding of seasonality and inspired a desire to cook. After Head Chef stints at highly awarded restaurants across Perth, Russell opened Must Winebar in 2001. Revisiting his obsession with French bistro food, he developed an outstanding menu with a modern touch and expert technique.

Couldnt be move in love with Must Winebar. We went back for our wedding anniversary and couldnt fault a thing! We went on a Tuesday when there was a WA wine tasting be showcased. Made for a great atmosphere and will definitely be back for one of their special events!

Going to the markets every weekend to select the tastiest, freshest and best local fruit and vegetables is one of Chef Blaikie's greatest joys. It’s a must. One thing’s for certain, Must Winebar is a must-visit for wine lovers in Perth. This modern wine bar boasts an excellent wine list (as you’d expect) that has kept it at the pinnacle of Perth’s bar scene since 2001.What drives the buzz for wine enthusiasts is its wine list is regularly changing with a challenging, diverse collection of wines from all parts of the world – served by the glass. They are rarely familiar and always tantalising: an alluring white from the Beeka Valley; a rosé from Montsant; a chardonnay viognier from Chile; a vermentino from Sardinia...should we go on? But it’s not all about wine, there’s impressive beer selections for the blokes, cocktails and spirits a plenty that will satisfy even the most fussy palates, very good bar food, delicious bistro meals and an atmospheric buzz to the place. What’s more, the upstairs Champagne Bar adds an extra dimension to dining. It’s intimate and offers five different styles of Champagne by the glass, and the most outstanding list in town by the bottle. We told you this was a must.
