Meet the Chef

Born and bred in Sydney, Peter Gilmore is the Executive Chef at two of Australia’s most dynamic restaurants; Bennelong and Quay. He started his apprenticeship at 16, then spent his twenties developing his own style working in kitchens overseas and in country New South Wales. Across both restaurants, Peter describes his cuisine as food inspired by nature and continues to work in partnership with small and artesian producers who cultivate bespoke produce exclusively for both Quay and Bennelong.

    A fantastic experience. Overall, from the service, the knowledge of the staff on the menu and wine to the sensational food. Staff were superbly attentive to details. The food was meticulous, although the Cod was a little disappointing considering the stock. Would recommend for a very special occasion. A true experience in food and service, the total package!

    One of the best, most innovative restaurants I've ever been to. Quay performed on every dimension - food, drink, service, atmosphere and views. Restaurants can't get much better than this.

    Hadn’t been to Quay for a good few years and came to celebrate Husbands birthday. Opted for the 10course and wow, absolutely delicious food! Usually there will be one or two courses that you think yeah that was ok, but I can honestly say every course was superb. Beautiful flavours, balanced yet full of flavour. I think my favourites were the eel and the poolish crumpets oh and the white coral ! Yes it’s expensive at $800 Including tip for two people for lunch and husband only drinking mocktails, but for a special occasion totally worth it.

    What an absolutely amazing dining experience! Quay boasts itself in its reputation and it’s nothing to disappoint. The food is so delicate and every dish that is presented is a fine piece of art. It’s just great food from amazing produce. The wine pairing is perfectly selected to complement each dish. Definitely worthy of your next special occasion!

    We're not big drinkers, so didn't order any wine with our food. My usual experience with this is being snubbed by the sommelier and/or other wait staff, but this did not happen at Quay. We were treated with respect and kindness equal to the other guests even though we did not order as much. I really enjoyed that. The view was spectacular as well. I had very high expectations coming here, and they were all met. I would definitely recommend this restaurant to others.

    One of the best dining experiences possible. Well deserves all the accolades. Pure theatre. Amazing food and service and looking directly onto Sydney harbour opera house and bridge!

    A very good place for special occasion, the food portion of each course is relative small and suitable for me. Non-alcoholic drink paring is excellent. The cup for the coffee is disappointing because of the pottery, it is too hot for holding and as it has no handle, we have to wait till the coffee cooled down and became Luke warm before we can hold the cup. So if they can improve by replacing the Coffee Cup with one that at least have a small handle or to get a cotton cup cover to shield the heat from the cup, that will be great.

    the dish portion is extremely small, we spend AUD 240 per person and no one feel the belly is filled with food. The food delivered in a very slow pace. Extremely disappointed.

    The food is beautifully balanced and worth the experience, and the setting (between the Bridge and the Opera House) was amazing. It was let down by the rushed finish in order to make the table available for the next sitting, after a somewhat lethargic service earlier on. (‘Don’t rush’ the waiter kept saying as they placed dessert on the table at the 2 hour mark). Wine pairings were disappointing, to be honest, with only 2 of 6 wines really well matched, and definitely was not worth the extra expense.

About the restaurant

This Rocks institution won Gourmet Traveller’s Restaurant of the Year for 2019. It has consistently held three Good Food Guide hats for seventeen years. Is it necessary to continue? Ok, easy. At the helm is highly celebrated chef, Peter Gilmore, who is known not simply for his culinary masterpieces but also his dedication to growing his own, fresh produce.

After a recent renovation, Quay is redesigning the fine dining experience. They have swapped the white tablecloths for more natural elements, including timber tables made from spotted gum, a timber ceiling and volcanic lava stone detailing.

They now offer a six course degustation meal for dinner midweek and lunch Friday to Sunday. As well as a 10-course meal on Friday and Saturday night. If you were hoping to try the famous ‘Snow Egg’, you’ll have to settle for the new dessert “White coral”. It features a light white chocolate ganache aerated under vacuum and then frozen with liquid nitrogen.

Quay should be top of your Sydney list for that most special of special occasions.
