Peter Gilmore

Born and bred in Sydney, Peter Gilmore is the Executive Chef at two of Australia’s most dynamic restaurants; Bennelong and Quay. He started his apprenticeship at 16, then spent his twenties developing his own style working in kitchens overseas and in country New South Wales. Across both restaurants, Peter describes his cuisine as food inspired by nature and continues to work in partnership with small and artesian producers who cultivate bespoke produce exclusively for both Quay and Bennelong.

Finally managed to get a booking after much anticipation. It was everything we expected it to be & more. The whole experience, from the moment we walked in to the moment we walked out, was outstanding. The service was friendly & professional, the atmosphere & views were unforgettable & the food was to die for. Every mouthful was an explosion of flavour.

This is Sydney's best restaurant, hands down. I have eaten at nearly every hatted restaurant in this city and Quay still blows me away. The food, venue and service all collide to form a perfect dining experience - you just can't fault them. It's very pricey but it is a must-do for a special occasion. Props to Francesca and Abdul who made our night even more special - you were both wonderful.

Dinner here is an experience in so many ways - from the amazing views to the impeccable and friendly service to the extraordinary food - it's like a trip to a new place in just a few hours. I can't recommend enough.

The Big Night Out - An introduction to Quay

Reopening to high praise of critics and diners alike, Quay reset the fine dining landscape in Australia with its reimagination in 2018. Named Restaurant of the Year by Australian Gourmet Traveller, and with Peter Gilmore Chef of the Year in The Good Food Guide, Quay continues its reign as one of Australia's greatest restaurants. In celebration of The Big Night Out, Peter has curated a limited edition five course menu which offers diners a taste of Quay. "For The Big Night Out I've created an abridged version of the Quay menu; one that still speaks to the Quay philosophy, but naturally, leaves diners wanting to come back for more." Says Peter Gilmore. Whilst the menu features some dishes exclusively, it also features some from the signature menu including Peter's new, playful dessert, aptly named 'Moo', an indulgent celebration of dairy. 5 courses- $195pp. Credit card details are requested for all reservations. Should you cancel your reservation within 24 hours of your reservation time, a $195per person late cancellation fee will apply.

NEW YEAR’S EVE AT QUAY: Celebrate a spectacular New Year's Eve with absolute front row seats at Quay overlooking sparkling Sydney Harbour. Begin your evening with a glass of Champagne and canapes on arrival, followed by seven course signature Peter Gilmore menu. Premium wines have been thoughtfully matched to each course by Head Sommelier Shanteh Wong, and guests will enjoy Champagne at the stroke of midnight to bring in 2020. Full payment by credit card is required for all reservations at the time of booking, at a charge of $2,200 per person plus a processing fee of $60.50 per person. About QUAY

This Rocks institution won Gourmet Traveller’s Restaurant of the Year for 2019. It has consistently held three Good Food Guide hats for seventeen years. Is it necessary to continue? Ok, easy. At the helm is highly celebrated chef, Peter Gilmore, who is known not simply for his culinary masterpieces but also his dedication to growing his own, fresh produce. After a recent renovation, Quay is redesigning the fine dining experience. They have swapped the white tablecloths for more natural elements, including timber tables made from spotted gum, a timber ceiling and volcanic lava stone detailing. They now offer a six course degustation meal for dinner midweek and lunch Friday to Sunday. As well as a 10-course meal on Friday and Saturday night. If you were hoping to try the famous ‘Snow Egg’, you’ll have to settle for the new dessert “White coral”. It features a light white chocolate ganache aerated under vacuum and then frozen with liquid nitrogen. Quay should be top of your Sydney list for that most special of special occasions.
