Dave Clarke

Raised in the Hunter Valley, Dave started his career working at key local restaurants. Moving to Sydney at 23, he was offered a position at Quay Restaurant before being invited to be the Executive Chef of French Chateau Stays, hosting master classes, market tours, designing menus and preparing meals. After a stint at The Chophouse Restaurant David joined the Jamie’s Italian team, bringing the brand to Australia and opening 6 stores before becoming Group Executive Chef of the Sydney Collective.

Usually its a pretty safe place to get quality food without the eye watering prices of some other CBD establishments. But my lamb shank was virtually raw and very small.

CBD gastro pub dining at its best Located on Level one of the historic Republic Hotel is Republic Dining... Enjoying panoramic views over Pitt and Bridge Streets, the dining room is an oasis from the wheeling and dealing of the CBD during the day and an intimate space by night. The venue boasts a bright and airy room with a classic bistro feel, it’s the perfect place in which to enjoy amiable table service and a glass or two from the extensive wine selection. Republic Dining has always been famous for their fresh oysters and in-house cold smoked salmon, and now, after the recent renovations, Chef Lee Thompson has access to a Montague Broiler, directly imported from the USA, which is producing premium steaks, lamb and pork. (**Inside Tip: Ask your waiter if the off the menu Rib-eye is available**). And don't worry chef hasn’t forgotten those who are in the mood for lighter fare, with seasonal fish and house made gnocchi amongst other dishes. Best Dish: Renowned for their steaks, these are a must when visiting Republic Dining.
