CBD gastro pub dining at its best
Located on Level one of the historic Republic Hotel is Republic Dining... Enjoying panoramic views over Pitt and Bridge Streets, the dining room is an oasis from the wheeling and dealing of the CBD during the day and an intimate space by night.
The venue boasts a bright and airy room with a classic bistro feel, it’s the perfect place in which to enjoy amiable table service and a glass or two from the extensive wine selection.
Republic Dining has always been famous for their fresh oysters and in-house cold smoked salmon, and now, after the recent renovations, Chef Lee Thompson has access to a Montague Broiler, directly imported from the USA, which is producing premium steaks, lamb and pork. (**Inside Tip: Ask your waiter if the off the menu Rib-eye is available**).
And don't worry chef hasn’t forgotten those who are in the mood for lighter fare, with seasonal fish and house made gnocchi amongst other dishes.
