Meet the Chef

Starting his career at Basil’s Seafood Restaurant in 1994, Thomas has spent his career working in leading hotels such as the Four Seasons, Hyatt Regency, Swissotel and The Langham. Between working in the USA, Thomas also became Executive Chef at Deep Blue Bistro, specializing in indigenous Australian cuisine. Family brought him back home, but not before spending more time abroad in the Philippines as a consulted chef. Settling in Canberra, Thomas has been at Sage Dining Rooms for over 2 years.

    We were given a voucher for Sage Restaurant as a wedding present and chose to use it for our first wedding anniversary. We enjoyed the five course degustation and were blown away by the flavours and inventiveness. To top off the night, Sage gave us a $50 voucher to use as a thankyou. Really impressed.

    We love this restaurant. This time we had the chefs choice tasting menu. Such a lovely idea and we got to rate the dishes. All my courses were delicious. We had two vegetarians and a vegan dining with us and they were also extremely pleased with their meals. It was nice to be able to have those options in a fine dining restaurant.

    This is our third time here and like previous occasions fantastic service. It was the first time however that we tried "Taste and Test". It was a fantastic concept and allowed us to give feed back to the kitchen before the dish was decided to be placed on the menu for the coming season. It made the entire meal very interesting and helped us engage with the service staff. It was $90 for 5 course and I found an old flyer from last year and it was only $75 for 5 course. A fair increase considering the menu was predominantly vegetables. Will definitely return still.
