Thomas Heinrich

Starting his career at Basil’s Seafood Restaurant in 1994, Thomas has spent his career working in leading hotels such as the Four Seasons, Hyatt Regency, Swissotel and The Langham. Between working in the USA, Thomas also became Executive Chef at Deep Blue Bistro, specializing in indigenous Australian cuisine. Family brought him back home, but not before spending more time abroad in the Philippines as a consulted chef. Settling in Canberra, Thomas has been at Sage Dining Rooms for over 2 years.

Amazing restaurant with incredible service and food. Very cosy atmosphere and the two staff were incredibly friendly and attentive during the whole meal. The food was unique and full of different flavours and textures, and the 5 course degustation of the chefs choice made us leave happy and full. Will definitely make this a must visit restaurant when we’re in Canberra again

It’s Truffle season and we booked in for the Truffle 8 course degustation. We have celebrated a special occasion at this restaurant before and loved it so decided to go back again. We were not disappointed. The service was exceptional, atmosphere warm and inviting and food absolutely delicious.

Everything was excellent! The waiters were lovely, the atmosphere of the restaurant was warm and cosy and the wine and food was delicious. They gave us a pre-entre and a pre-dessert plus an extra desert at the end, being that we were celebrating a birthday. All that on top of out 3 course meal. The only feedback I would give is that the toilets were a bit uncomfortable and very cold compared to the rest of the restaurant.

Excellent venue. Truffle degustation menu was very nice. About half of the courses celebrated truffle whereas the others simply had truffle shaved over them. Staff were under pressure meeting requirements of patrons arriving from 8 - 8:30 at table change over time. Otherwise service was excellent.

About Sage Dining Rooms

Ying and yang fine dining. Locals are flocking to this fine dining restaurant for its cosy interior and a Zen-like courtyard. Dine in the Alfresco space strewn in fairy lights, gently illuminating soft greenery - it doesn’t get much better than this. The modern Australian menu features innovative and mouth-watering combinations of ingredients and styles. Changing frequently to keep things fresh and interesting, the menu might include such tempting combinations such as sugar-cured ocean trout with avocado, wasabi, olive and citrus or chocolate couscous with espresso ice cream, orange and meringue. Best dish: go for the five surprise courses picked by the chef.
