Thomas Heinrich

Starting his career at Basil’s Seafood Restaurant in 1994, Thomas has spent his career working in leading hotels such as the Four Seasons, Hyatt Regency, Swissotel and The Langham. Between working in the USA, Thomas also became Executive Chef at Deep Blue Bistro, specializing in indigenous Australian cuisine. Family brought him back home, but not before spending more time abroad in the Philippines as a consulted chef. Settling in Canberra, Thomas has been at Sage Dining Rooms for over 2 years.

No balance in the food, was too rich. Not enough texture and freshness in the dishes. I would have really like an accompanying salad to the dishes. Maybe it wasn’t for my palate

We really looked forward to have a 3 course lunch at this restaurant, as it was rated on of the best 14 in Australia. However we were really disappointed with food. Some dishes lacked flavour, the others had strange flavours which didn't go well together. The duck didn't taste like duck at all and the sauces didn't complement the meat. There was no green/fresh element on any of the plates and the crunchy element was represented by rice pops or tasteless dukkah. We felt like a lot of elements on the plates were precooked and there was not much cooked fresh to order, which you would expect from the fine dining restaurant. On the positive side, the service was very good and the atmosphere was nice. In the restaurant like this, ideally it would be good to see more local fresh produce, where the natural taste of the main ingredient on the plate is honoured and complemented by freshly made sauces.

Food amazing. Pairing wines good however only 1/2 glasses which we thought was good. Slightly noisy atmosphere and a little difficult to find in the dark. Well worth visit with food amazing. Surprise Bday dish if you mention beforehand.

Amazing food! An explosion of flavours. Staff also made an effort to make my son’s 20 th birthday to a lovely occasion, arranged a little cake for free and even wrote a birthday card.

About Sage Dining Rooms

Ying and yang fine dining. Locals are flocking to this fine dining restaurant for its cosy interior and a Zen-like courtyard. Dine in the Alfresco space strewn in fairy lights, gently illuminating soft greenery - it doesn’t get much better than this. The modern Australian menu features innovative and mouth-watering combinations of ingredients and styles. Changing frequently to keep things fresh and interesting, the menu might include such tempting combinations such as sugar-cured ocean trout with avocado, wasabi, olive and citrus or chocolate couscous with espresso ice cream, orange and meringue. Best dish: go for the five surprise courses picked by the chef.
