Thomas Heinrich

Starting his career at Basil’s Seafood Restaurant in 1994, Thomas has spent his career working in leading hotels such as the Four Seasons, Hyatt Regency, Swissotel and The Langham. Between working in the USA, Thomas also became Executive Chef at Deep Blue Bistro, specializing in indigenous Australian cuisine. Family brought him back home, but not before spending more time abroad in the Philippines as a consulted chef. Settling in Canberra, Thomas has been at Sage Dining Rooms for over 2 years.

Amazing food! An explosion of flavours. Staff also made an effort to make my son’s 20 th birthday to a lovely occasion, arranged a little cake for free and even wrote a birthday card.

Very poorly organised and asked to leave when barely had finished the degustation. They were slow with serving and went over time. Asked for coffee and were told could only have it outside (in Canberra winter)!! Service was very slow and poor. Wine pairing often came too late for dish and sommelier had little idea apart from rote learning descriptions.

Sage has superb food every we time we go. The staff are always great and knowledge able about the food & wine. My wife & I look forward to dining there whenever we come to Canberra

Aynsley was our wait staff; she was fantastic. She explained each course in just the right amount of detail, never hovered, suggested a beautiful wine to go with the courses. Chef Thomas did an amazing job of designing the menu. Food was superb.

We came to have a 3 course ala carte dinner for 3 people. But they included 2 pre entre and 2 pre desert tastings! Definitely coming back!

This is a restaurant on the rise, excellent high quality wines perfectly matched with an emphasis on cold climate, the dumplings in broth perfect, duck cold smoked cured soft , kangaroo perfectly cooked and tender with jus that are rich , non salty and burst with flavour, desert wonderful pineapple , green tea ice cream not too sweet. Definitely the best place I have eaten in Canberra including the hatted. Staff local students who have learned their lines well but give it that relaxed Aussie feel amongst a warm and quirky decor. It’s not a melb 2 hats but certainly a one. Give it a go - quiet and very enjoyable

About Sage Dining Rooms

Ying and yang fine dining. Locals are flocking to this fine dining restaurant for its cosy interior and a Zen-like courtyard. Dine in the Alfresco space strewn in fairy lights, gently illuminating soft greenery - it doesn’t get much better than this. The modern Australian menu features innovative and mouth-watering combinations of ingredients and styles. Changing frequently to keep things fresh and interesting, the menu might include such tempting combinations such as sugar-cured ocean trout with avocado, wasabi, olive and citrus or chocolate couscous with espresso ice cream, orange and meringue. Best dish: go for the five surprise courses picked by the chef.
