Thomas Heinrich

Starting his career at Basil’s Seafood Restaurant in 1994, Thomas has spent his career working in leading hotels such as the Four Seasons, Hyatt Regency, Swissotel and The Langham. Between working in the USA, Thomas also became Executive Chef at Deep Blue Bistro, specializing in indigenous Australian cuisine. Family brought him back home, but not before spending more time abroad in the Philippines as a consulted chef. Settling in Canberra, Thomas has been at Sage Dining Rooms for over 2 years.

We love this restaurant. This time we had the chefs choice tasting menu. Such a lovely idea and we got to rate the dishes. All my courses were delicious. We had two vegetarians and a vegan dining with us and they were also extremely pleased with their meals. It was nice to be able to have those options in a fine dining restaurant.

Things to Improve on: Make the room a little warmer and the decor to be less dark. Also the waitresses should make more of an effort to present themselves. Ie. manicure. This is fine dining not the pub. The positive: The food was fantastic but the matching wines could be improved a little. Compliments to the chef, we enjoyed the meal tremendously. Thank you !

Food is always great and the staff are outstanding - very courteous, professional, and knowledgeable. The ambiance is great as always, very intimate. In saying this, some additional measures can be further taken as it can sometimes feel crowded in the space and that can sometimes take away, albeit almost negligible, from the intimate nature of the setting.

This is our third time here and like previous occasions fantastic service. It was the first time however that we tried "Taste and Test". It was a fantastic concept and allowed us to give feed back to the kitchen before the dish was decided to be placed on the menu for the coming season. It made the entire meal very interesting and helped us engage with the service staff. It was $90 for 5 course and I found an old flyer from last year and it was only $75 for 5 course. A fair increase considering the menu was predominantly vegetables. Will definitely return still.

About Sage Dining Rooms

Ying and yang fine dining. Locals are flocking to this fine dining restaurant for its cosy interior and a Zen-like courtyard. Dine in the Alfresco space strewn in fairy lights, gently illuminating soft greenery - it doesn’t get much better than this. The modern Australian menu features innovative and mouth-watering combinations of ingredients and styles. Changing frequently to keep things fresh and interesting, the menu might include such tempting combinations such as sugar-cured ocean trout with avocado, wasabi, olive and citrus or chocolate couscous with espresso ice cream, orange and meringue. Best dish: go for the five surprise courses picked by the chef.
