Thomas Heinrich

Starting his career at Basil’s Seafood Restaurant in 1994, Thomas has spent his career working in leading hotels such as the Four Seasons, Hyatt Regency, Swissotel and The Langham. Between working in the USA, Thomas also became Executive Chef at Deep Blue Bistro, specializing in indigenous Australian cuisine. Family brought him back home, but not before spending more time abroad in the Philippines as a consulted chef. Settling in Canberra, Thomas has been at Sage Dining Rooms for over 2 years.

it was my 77th birthday. Sometimes when you're old you feel a bit uncomfortable going to a swanky restaurant particularly with a husband with mobility problems. However everyone was very kind and I was given a little birthday cake. The food and wine were excellent.

This is absolutely the best lunch available in Canberra. Try the 5 course, you will not be disappointed. Wine pairing, service and atmosphere are also exceptional

Amazing server - Rachel worked hard to memorise every element and pairing of the wine menu, was very friendly, polite and incredibly attentive. Hubby was amazed at her fast napkin folding skills each time he disappeared to the restroom, and I was amazed at the perfect timing of cleanup / waiting. Food was spot on, especially the Angus beef. We cannot fault the chefs efforts. We regret not tipping Rachel at the time. We sure will be next time.

Warm professional service combined with beautifully prepared produce made for a wonderful evening. Freshly shucked plump Sydney rocks then to shaved pickled calamari and lightly seared tuna belly all perfectly prepared for starters. Followed by King George Whiting and Spinach Gnudi for mains again ever so tasty and expertly prepared. The menu also has a great selection of beef, lamb and poultry which we will try on our next visit as on this trip was on Good Friday. A well put together wine list with good local offerings. A restaurant that is definitely worth a visit. A really nice surprise is the snacks that the chef prepares from a stunning amuse bouchée to a yummy pre desert selection all complimentary.

Staff were amazing and accommodating. Newly engaged (an hour before) the staff were kind and congratulated us. The extra dessert was fabulous! And all the food was interesting and tasty. Highly recommend and couldn’t fault.

About Sage Dining Rooms

Ying and yang fine dining. Locals are flocking to this fine dining restaurant for its cosy interior and a Zen-like courtyard. Dine in the Alfresco space strewn in fairy lights, gently illuminating soft greenery - it doesn’t get much better than this. The modern Australian menu features innovative and mouth-watering combinations of ingredients and styles. Changing frequently to keep things fresh and interesting, the menu might include such tempting combinations such as sugar-cured ocean trout with avocado, wasabi, olive and citrus or chocolate couscous with espresso ice cream, orange and meringue. Best dish: go for the five surprise courses picked by the chef.
