All things moo When a steakhouse expands to 15 locations, you know that they must be doing something right. Squires Loft in Subiaco, the golden triangle of restaurant real estate on the West Coast, is just as popular as the first venue in the chain that opened back in the ‘90s in Brighton. Squires “steaks” its reputation on great food and unique flavours. The crowds that rock up to the Suby spot show that the owners are on to something. Naturally, patrons prefer porterhouse or other grills but Squires does cater for vegetarians or chicken eaters – so it's a suitable space for all. Try the Angus beef short ribs – 400g or 800g options – that are slow cooked and basted and are provided as a tasty starter. Ahem, that's right – a starter. Weighing in at 1kg, you could select the pork spare ribs for a main with chips or baked potato. And, if you can still chew, you could top it all off with ice-cream with Mars Bar hot chocolate sauce. Best dish: Wagyu burger – 200g Waygu beef char-grilled and basted then served on a toasted bun with caramelised onions, Swiss cheese, wild roquette, Roma tomatoes, chips and sauce
