Nick Stapleton

Chef Nick Stapleton is primarily inspired by Vietnamese cuisine but also draws on traditional French techniques. Growing up with a mother who had her own restaurant, Nick learnt to love simple cooking that respected the ingredients; pasta, roast chicken, slow-cooked pork shoulder. We did the New Farm cinema movie meal deal- what a bargain! We shared 3 entrees and 3 mains, and a bottle of wine. Wonderful first experience at Spicers Balfour. The Asian/ French mix is scrumptious. Definitely recommend the ribs and pork belly!

The Balfour Hotel is a real gem where the whole experience from arrival through pre-dinner cocktails to dinner was delightful. I have an unusual food intolerance which the chef accommodated with imagination and creativity. All of the staff from the cocktail bar to the restaurant are truly a credit to their craft.

Exceptional fusion food but the service had let me down. I took my kids there so I ensured one particular dish was not spicy but it turned out to have chilli flakes on it. Spoke to the waiter about it but no apology or any effort to exchange the dish to something more suitable for my kids. It's not really a family friendly restaurant.

Wonderful service with an excellent and diverse menu supported by delicious, well presented dishes. The layout offers a variety of settings in a quiet atmosphere without the intrusion of loud music. An idyllic dining experience.
