Ignacio Castells Rusinol

Head chef Ignacio Castells Rusinol is a Barcelona native and was sponsored by Tinto to come to Melbourne to take charge of the kitchen in 2017/18. He did his training in some of the best restaurants in Barcelona before working in the UK and Azerbaijan. He brings with him an intrinsic knowledge of Spanish and Catalan cuisine. His approach is to maintain the authentic flavours of Barcelona but adjust the plates to include the fresh approach our Melbourne customers are looking for.

Our night at Tinto was a work celebration and we had a great time. The entrees were fast and fresh , prawns, calamari and croquettes. Our mains were sufficiently spaced and brought to the table with a smile. Two of us had the paella and said it was most enjoyable. The meatballs, lamb shank and wagyu steak were delicious. Great selection of international and local wines - the Turmeon Vermouth is a must!! All delivered with great service and Spanish flair. I’ll be back!

Great food and very friendly staff. Service was perhaps too fast and could have been spread out a bit more but that is a minor complaint. Would definitely return.

Tinto is serving Paellas throughout Spring and into early summer to celebrate the fresh produce coming into season. Although a perennial classic, there is more to Paella than seafood. Special Spanish wine bar Tinto is an authentic Spanish WineBar that brings the flavours and exhilarating atmosphere of Barcelona to the heart of Melbourne’s inner east. The space is small and intimate with a long bar reminiscent of a tapas bar you would find off La Rambla in Barcelona. With many of the staff Spanish speaking, for a second you might actually feel like you’re in Spain, dining out after a much needed siesta.
