‘From farm to plate'
‘Vaquero' in Spanish translates to the horseback mounted cattle herder. In the 1500s, the Spanish brought the vaquero to Mexico. This influenced the cuisine, which brought the importance of livestock to their dishes. In Albion is Vaquero Dining, a place for relaxation and good food. The menu is made to be shared between friends and family. They pride themselves on the ‘farm to plate' ethic, where the best ingredients are sourced. And they are only sourced through farmers that utilise sustainable, organic and socially conscious methods. Vaquero Dining exudes sophistication and elegance in every dish.
