The world of WAQU. There are two parts to dining at WAQU, a modern fine dining Japanese restaurant in Crows Nest. First, choose from two dining experiences: fine dining offers a six or eight course degustation menu in a sleek private area, and is ideal for group gatherings, corporate functions or special occasions. Kappo dining, on the other hand, is a sophisticated izakaya bistro featuring over 30 dishes on the a la carte menu. Start with sake and some authentic Asian tapas, before moving onto WAQU’s signature wagyu beef steaks. The food is treated like art on a plate at WAQU, expertly arranged with unusual yet delicate pairings. While it’s a Japanese restaurant, there is a definite East meets West fusion; you’ll also find foie gras and fig, kingfish carpaccio, kangaroo and goat cheese all given an innovative Japanese twist. They’re curious combinations, but chef Kensuke Yada pulls it off with style. If it’s all a little too out there for you, then stick to the wagyu – it’s some of the best beef you’ll find this side of Japan.Best dish: Cabassi Wagyu, rump cap.
